I actually don't let the mixtu...Good question! I actually don't let the mixture cool all the way before blending it - I just let it cool down a bit so it doesn't explode through the top of the blender. I know the gelatin needs to be warmed to be activated properly. I whisk it back into the saucepan so I can be sure I'm getting all the lumps. If I had a very high-powered blender like a Vitamix, I might do it all in the blender.
